Papaya or Peach Hot Pepper Sauce Recipe
3 Habanero or Scotch bonnets, Chopped 1/2 cup Papaya; substitute peaches, Fresh or canned 1/2 cup Raisins 1 cup Onion; minced 3 clove Garlic; minced 1/2 tsp Turmeric 1/4 cup Malt vinegar Bring everything to a boil together; lower heat and simmer 5 min. Puree in blender.

Hot Pepper Sauce With Papaya
1 Small Papay seeded, peeled, chopped 1/2 lb. Hot peppers, crushed 1 Cucumber, chopped 2 Onions, finely chopped 2 Garlic cloves, minced 1 tbsp. Salt 2 cups Vinegar 1 tbsp. Mustard 1 tsp. Oil Boil papaw until tender, add all other ingredients and simmer for 10 minutes. Cool and store in jars.
Basic Hot Pepper Sauce
3 cups Distilled white vinegar 2 lb Cayenne OR Jalapenos seeded and chopped 2 tsp Salt Simmer vinegar, salt and peppers at least 5 minutes. Process in processor. Store in a glass bottle. Put in a dark cabinet and let age at least 3 months. Strain when ready to use.
