<p>B&amp;O Ghost Train, like the other fine sauces B&amp;O sauces (Fire Box, Iron Thunder, and Thunder Fire) features absolutely fresh ingredients that shone through in the taste of the sauce. Ghost Train, as you might have guessed from the name of the sauce, is built upon a foundation of Bhut Jolokia peppers (the ghost pepper). But that&#8217;s not all folks. There&#8217;s also Peri-Peri peppers thrown in for good measure, along with a little pepper extract. Combine those ingredients with vinegar, tomato, garlic, onion, molasses, salt, and assorted herbs, you&#8217;ve got yourself something special.</p>
<p>I have always dug the taste of the Peri-Peri and the jolokia. They are rather similar and compliment one another well in this hot sauce blend. The combination also produces a blistering explosion that will leave heat seekers smiling from one ear to the other.</p>
<p>Ghost Train works very well in a number of circumstances. It&#8217;s an excellent add in to any salsa or cheese, it tastes great in chili, and works well as a steak sauce. It definitely isn&#8217;t for those who can&#8217;t stand the heat, though. The burn is almost instant and lingers lasts for some time, but it is a heat that chili heads well satisfied.</p>
<p>I&#8217;m a barbecue nut. There are a lot of great hot barbecue sauces on the market, but if you don&#8217;t happen to have one on hand, try using Ghost Train as the basis for your own sauce. Mix it with some tomato sauce, molasses, liquid smoke, and butter for a sauce you can spread over your barbecue.</p>
<p>This one has a nice, medium pore, great aroma, super heat, and the taste only a sauce crafted with skill can produce.</p>

<p>Basic pepper sauces are a staple for heat lovers. They are usually made with cayenne peppers or some similar chili peppers, based heavily in vinegar, with a touch of salt. If the balance is right, nothing beats a good pepper sauce. If the balance is off, it goes down the drain. In Iron Thunder, just like its sister B&amp;O sauces, the Iron Thunder comes on with all the power of a freight train and pleases the palette the way only the most well-crafted hot sauces do. This sauce features a nice pour with a lot of ingredients floating in the mix. Ingredients here include habanero peppers, red wine vinegar, lime juice, cilantro, garlic, and onions. The emphasis is on fresh, as it is with all these sauces, and the balance of flavor is so delightfully artistic that you can&#8217;t help but fall in love with this stuff.</p>
<p>The beauty of Iron Thunder lies not only in its taste, bottle design (like all B&amp;O Railroad sauces), and texture, but in its consistently good interaction with whatever foods you choose to use it with. I use it at breakfast, lunch, and dinner, pouring it on and in whatever foods I happen to be eating, all to great effect.</p>
<p>This is a table sauce. That means you can put it on your table and use it frequently. The inclusion of all fresh ingredients here &#8212; especially the cilantro &#8212; gives this sauce a bright, clean taste you will find yourself craving often.</p>
<p>Thunder Fire is bursting with he flavor of its ingredients, which balance so well together and work toward the same end &#8212; bringing out the taste of the food you use it with. B&amp;O Railroad sauces are right on track. Fire Box  is the sauce I&#8217;m talking about now, but other great B&amp;O Railroad sauces include Ghost Train, Iron Thunder, and Thunder Fire. B&amp;O Fire Box is an extremely well balanced hot sauce, crafted from the finest ingredients and meant to put a kick in your pants. This sauce was named after the hottest part of the steam engine, and with good reason. Fresh habanero peppers, vinegar, lime juice, onion, garlic, and evaporated cane juice make up the fuel that fires this sauce. Fresh is the key. This is one of those sauces that put fresh on the map. You can taste it in every bite.</p>
<p>What I find particularly inviting about this sauce (as well as the others) is the balance of ingredients. The habaneros are at the forefront, with the overtone of lime running a close second. The other ingredients make their presence known. The garlic is pretty sharp in the mix from the instant you open the bottle, but it never overpowers &#8212; in fact, it only compliments the overall flavor structure of this sauce.</p>
<p>I use this sauce as a straight chip dip. It&#8217;s that damn good. While it is satisfactorily hot, an experienced heat lover will be able to eat it without the benefit of anything to drink or anything to take the edge off. You don&#8217;t want to take the edge off. It&#8217;s a perfect heat that lingers on your tongue and warms the gullet. Good stuff all the way around.</p>
<p>In addition to the gourmet taste, aroma, and texture, this sauce also has a very cool label, as do all the other sauces in this line. If you&#8217;re a train aficionado, you&#8217;ll truly appreciate the label artwork and the train-themed names for this sauce. The bottles are as interesting to read as the sauces are to eat. Add Fire Box to your shelf or keep it on your table, along with all the other great train sauces.</p>

I thought “this is not that hot of a sauce in the heat department but, I like the flavor”  and then like 20 seconds later the heat hit me like a bus!  This sauce deserves it’s tag line – watch out!  </p>
